Project Scope:
The existing vapor extraction fan shall be replaced with new extraction fan with increased capacity as this fan is inadequate in handling vapor effectively. New extraction fan with VFD is designed to effectively handle vapor generated during open cooking process in kettles and premix tanks. A cyclonic separator downstream of vapor extraction fan to reduce moisture/water content and particulate matters that are vented to atmosphere through exhaust stack. To automate the vapor collection from cooking vessels and premix tanks and thereby adjusting the speed of vapor extraction fan, existing manual dampers that are provided downstream of kettles is replaced with new automated dampers whose operation was incorporated along with the new extraction fan in the existing recipes of different batches.
